One of the most expensive coffee we have bought so far, comparable to geisha.
This might be one of the least expensive coffee we will buy. Due to the amazing aroma and innovative ways of experimenting with processes, we pay a hefty price for this coffee. This coffee is two levels above geisha and anaerobic process. This coffee is super limited and super worth trying. It's not something you will drink daily but definitely something you want to mark under your checklist.
Information
This coffee was grown by Felipe Arcila at the farm of Jardines Del Eden. This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage peaches and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with peaches placed amongst the coffee until the ideal moisture content was achieved.
This microlot is 100% Castillo. This variety was developed by Federacion Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
