Chiapas is situated in the southern reaches of Mexico with rich biodiversity and climbing altitudes - this state is known for its healthy soil and ideal climates for coffee production. As one of the five mayan states in Mexico Chipas has a wealth archological and cultural history. In the centre of Chipas is the Fraylesca region, the source of this coffee.
During the harvest, cherries are hand picked and delivered to on-farm processing facilities within each farm. The cherries are floated and sorted to ensure quality are maintained . Next cherry are depulped and fremented in the tanks of water to break down the exterior mucilage. Once complete, the coffee is spread evenly on cement patio to dry in open sun. The coffee is regularly raked to prevent mold growth.
As soon as coffee reaches an ideal moisture content, it is transported to the dry millto be hulled, cleaned, sorted, graded prior for export.
