Fazenda Santa Monica, located in the stunning region of Minas Gerais which is perfected poised for producing amazing coffee. Rich soil, high altitudes and many micro climates make Minas Gerais one of most ideal coffee harvest in Brazil.
This Anaerobic Natural lot starts its processing by picking and floating the cherries and leaving them to dry ferment in sealed tanks for up to 5 days. The cherries are then placed to dry in african beds for 15 to 20 days, depending on the weather.
